Custard apple brings an exotic fruit twist to the classic apple crumble. This recipe has a wonderful combination of crunch with the walnut-crumble, and is full of gut-supportive fibres, spices, and fruits. Serve up this crumble as a snack, after-dinner treat or even as a healthy indulgent breakfast.

Ingredients

Apple filling

1 custard apple
4 apples, thinly sliced (you can peel if you would like)
½ tsp ground ginger
1 tbsp coconut sugar
2 tbsp lemon juice

Crumble topping

1 cup rolled oats
1 cup almond meal
¼ cup crushed walnuts
¼ cup maple syrup
¼ cup coconut oil
Pinch of sea salt

Toppings

Dollop of coconut yoghurt or coconut ice cream
Coconut flakes
Crushed pistachios (or any other nuts/seeds)

Method

  1. Preheat oven to 180 degrees. Lightly brush a baking dish with some olive or coconut oil.
  2. Scoop the custard apple flesh from the skin and remove any seeds. Combine the flesh with the sliced apples in a large bowl.
  3. Add ginger, coconut sugar and lemon juice and mix well. Pour this into the prepared baking dish.
  4. In another bowl, combine all crumble topping ingredients. Ensure your coconut oil is liquid for ease of mixing. Sprinkle the crumble over the fruit.
  5. Place the baking dish into the oven and bake for roughly 30 minutes, until the fruit is bubbling, and the topping is golden.
  6. Remove your crumble from the oven and serve warm with desired toppings.
