Turkish Eggs & Whipped Feta

A breakfast classics with a creamy, herby whipped feta base for nutrient-packed eggs, while a drizzle of sweet and spicy butter adds a delicious kick. Pair with your favourite greens, warm sourdough, or seeded bread for a wholesome and flavourful start to your day.

Our delightful Turkish Eggs & Whipped Feta recipe uses traditional breakfast ingredients like yoghurt and eggs in a fun new way! The creamy, herby whipped feta is the base for our eggs, also known as nature's multivitamin as eggs are full of high quality protein, fatty acids, and key nutrients including vitamin D, B vitamins, selenium, iodine and choline. Drizzled with a spicy but sweet butter concoction, these eggs are transformed into a spicy nourishing bite. Serve them with a side of your favourite greens, warm sourdough, or a seeded bread, topped with a sprinkle of fresh herbs and seeds to start the day well!


Ingredients

Whipped Feta

1/2 cup feta
1/2 cup greek yoghurt
1 clove of garlic
2 dill fronds
1/2 teaspoon black pepper
1 tablespoon extra-virgin olive oil

Chilli Butter

2 tablespoons butter or olive oil 
2 tablespoons coconut oil
1-2 teaspoons chilli flakes 
1 teaspoon honey
½ teaspoon sweet paprika

4 -6 eggs
Fresh herbs and seeds of choice
Optional Greens or Bread of choice to serve

Method

  1. Combine Greek yoghurt, fetta, dill ,garlic and pepper in a bowl or blender. Mix until well incorporated and store in the fridge.
  2. In a small saucepan, gently melt butter, coconut oil, crushed chilli flakes, honey and paprika until well combined. Set aside to garnish the eggs.
  3. In another pan heat olive oil or butter over medium-high heat to fry the eggs to your preference.
  4. Spread the yoghurt mixture in a deep set bowl or plate. Top with eggs, drizzle with spicy butter sauce.
  5. Serve with either suited greens, fresh sourdough or a yummy seeded bread. Decorate with herbs and seeds of choice.
