A quick, no-bake treat bursting with tangy lemon flavour that’s a perfect wholesome snack for school lunches or afternoon indulgence!

Satisfy your sweet cravings with our Coconut Lemon Bliss Balls—a quick, no-bake treat that’s perfect for a wholesome snack. Bursting with tangy lemon flavour, these creamy treats, made from cashews, lemon and coconut, come together in just 5 minutes with 8 simple ingredients. Stored in the fridge, these bite-sized beauties maintain freshness for a week or up to 3 months in the freezer. Naturally dairy-free, gluten-free and vegan, they're a healthy and delicious addition to school lunches or simple afternoon nutritious indulgence.


Ingredients

½ cup cashews raw and unsalted
½ cup desiccated coconut
Zest one large lemon*
Juice of half a lemon
1/2 teaspoon natural vanilla extract
Pinch of salt
2 tablespoons maple syrup or honey
1 tablespoon coconut oil
An optional teaspoon of Sol Cleanse Turmeric Latte Powder
Extra desiccated coconut for rolling in

Method

  1. Place the ingredients into your processor in the above order and blend until the mixture resembles a sticky crumb.
  2. Use your hands to shape a tablespoon of the mixture into balls, making 10-12 balls.
  3. Roll the balls in the extra coconut and place in the fridge or freezer to set.
  4. Enjoy!

*Double the zest for extra lemony flavour goodness if lemon is your jam.
