Spring Strawberry Salad

Serves: 3-4 as a side salad

Introducing our Spring Strawberry Salad, a delightful blend of freshness perfect for spring and summer entertaining. This gluten-free, dairy-free, and vegetarian recipe serves 3-4 as a delightful side salad and comes together in just 15 minutes (thanks to pre roasted almonds). The heart of this dish are the vibrant ingredients, combining fruit and vegetables to show that salads no longer need to be boring. For a creamy indulgence, you can also add goat cheese or dairy-free feta. We hope you share this with loved ones and enjoy the essence of spring in every bite!


Ingredients

Dressing

2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
1/2 tsp maple syrup
1 clove of minced garlic
1 pinch each sea salt and black pepper

Salad

1 large package baby spinach
  1 punnet of  thinly sliced strawberries
1 cucumber ribbons
  1 cup of roasted almonds
1/2 large red onion
Optional: 1/2 cup goat cheese or dairy-free feta

Method

  1. Combine all the dressing ingredients in a jar or small bowl. Shake the jar or whisk the mixture until well combined. To adjust the flavour you can add more balsamic for acidity, maple syrup for sweetness, or olive oil for creaminess.
  2. In a large mixing or mixing bowl, combine spinach, ribboned cucumber, thinly sliced onion, half of the strawberries,  and half of the roasted almonds. Drizzle the salad with half of the prepared dressing. Toss the ingredients gently to combine. 
  3. Plate the salad and garnish it with the remaining strawberries and almonds. Add a sprinkle of goat cheese or dairy free feta if using.
  4. Serve the salad with the remaining dressing on the side, allowing individuals to add more dressing if desired.
  5. This salad is best enjoyed fresh, but you can store leftovers in the refrigerator for the next day.
