Our Spring Pea Pesto recipe brings the vibrant flavours of spring to brighten any meal. This is a versatile pesto, that can be adapted to the nuts and herbs you have on hand. Not only is it a burst of freshness but also a nutritional powerhouse,  Perfect for enhancing nourish bowls, elevating your breakfast, or serving as a dip for vegetables. It’s entirely vegan, gluten-free, and dairy-free, catering to various dietary preferences so you can say goodbye to store-bought pesto and embrace this easy homemade goodness!


Ingredients

1 ½ cups packed basil
1/2 cup packed flat-leaf parsley
1 cup green peas (defrosted)
4 cloves garlic
1/4 cup walnuts (can be changed for any nuts or seeds on hand)
1/4 cup olive oil
1 medium lemon, juiced
Pinch sea salt & black pepper

Optional Additions

A sprinkle of chilli flakes for heat
Handful of spinach for added greens
¼ cup of nutritional yeast for a cheesy flavour

Method

  1. Place basil, parsley, peas, garlic, walnuts nuts, lemon juice, sea salt, pepper and olive oil in a food processor or blender. Blend the ingredients until well combined. 
  2. Continue blending and scraping down the sides as necessary until the mixture becomes creamy and well incorporated. If the mixture struggles to blend, add a little more olive oil, water or plant milk.
  3. Taste the pesto and adjust the seasonings to your liking. More lemon juice will brighten the flavour, salt for added saltiness, or peas for a touch of sweetness, as needed.
  4. Store in an air-tight jar with a layer of olive oil on the top to keep it fresh for up to 3 days. Alternatively, you can freeze it in an ice cube tray to keep for up to 3 months.
